A wine glass must, first of all, have an in-turned top. The bowl must narrow towards the top to allow the aromas of the wine to be trapped and funneled up towards you. A shallow bowl will present a large surface area of wine to the air, and there will be nothing to trap the aromas. Half the pleasure of the wine will be wasted.
The next essential is a long enough stem to allow the glass to be held without the hand coming into contact with the bowl. A glass of chilled white wine will be warmed rapidly by the hand.
