In learning about a German wine, geographic origin is only one piece of the jigsaw. Next comes the official quality level. Germany divides its wine into three broad categories, based upon the sugar level in the grape juice (or "must").

These categories coincide with the EC rule that all wine is either quality wine or table wine. Germany finds it possible to define most of its wine - in some years, virtually all -as quality wine (the equivalent French figure is 64%).
