Many spark-ling wines are made according to an appellation controlee - for example champagne and the various cremants of Bourgogne, Alsace and the Loire. Some of the regional AOCs allow for sparkling variants: Bordeaux has one such.

Other sparkling wines are made outside the AOC regulations. These employ one of the "industrial" tech-niques described on. The grapes used may come from any-where in France, or even from else-where in the EC. Such wines are labelled with a brand name and the words Vin Mousseux".
