Modern filters can be set to remove specific-sized particles from the wine. This allows yeast cells to be filtered out, as well as other solid matter, preventing secondary fermentation. Filtering is thus an alternative, in whole or part, to the use of sulphur dioxide and other chemical disinfectants.
