The best red wines come from the hilly Northern Region. It is here that the Suhindol winery is located. Suhindol built the international fame of Bulgarian Cabernet Sauvignon, and incidentally made a name for itself in the process, but today it is not necessarily the best producer.

Suhindol was the first exporting winery in Bulgaria to be handed over to private owners. It also controls the Vinenka winery, which is one of the country's oldest, producing very good Cabernet Sauvignon and good Merlot.

The Russe winery is one of the best in Bulgaria. The most important single grape variety here is Cabernet Sauvignon, and the wine is made to high standards in a well-equipped and up-to-date establishment.
