The hot Southern Region is predominantly a red-wine producer, at least in terms of quality. Mavrud and Pamid are important here (the former especially in Assenovgrad) and there is some Cabernet Sauvignon, Pinot Noir and Merlot - the last being particularly good from the Haskovo, Stambolovo and Sakar areas.

Mavrud from Assenovgrad is a Controliran wine; dark and spicy, it can age well. The district is sited where the ground rises to the Rhodope Mountains that form the border with Greece.
