Those white grape varieties that suit oak treatment, such as Chardonnay, Semillon or Sauvignon Blanc, are increasingly being barrel-fermented. Maturation in French oak barriques is, typically, six to nine months for premium wines. Aromatic varieties, such as Riesling and Gewürztraminer, are usually tank-fermented and bottled soon after.
